
Al Roker has been frank about his health journey, and now the TODAY show weatherman is sharing the go-to lunch that keeps him going and in line with his nutritional goals.
In a recent interview with Prevention magazine, the 70-year-old broadcaster revealed his meals are handpicked to have high levels of both protein and fiber, two nutrients that make him feel full while maintaining overall health.
Roker starts his day off with only one glass of cold-brew coffee while getting the morning forecast ready. Later, he’ll grab a non-fat yogurt and maybe a banana to get his day started. But for lunch, he opt for something that has lean protein paired with fiber-fortified gut-friendly food.
His standard is a salad served with salmon or diced chicken, along with grains or fresh tomato. These foods, Roker said, not only keep him full but also supply constant energy. Salmon and chicken are great sources of protein, while leafy greens, grains, and vegetables contain fiber that prevents digestive issues and promotes heart health.
“Dinner is relatively low-protein, mostly chicken and fish, and a little bit of chicken,” he said, adding that steak only appears about once a week.
The focus on nutritious meals is no coincidence. Roker notoriously shed over 100 pounds after undergoing gastric bypass surgery in 2002. He has since concentrated on smaller portions full of nutrients to maintain his energy levels without eating too much. The Start TODAY app, on which he is Chief Motivation Officer, even provides easy recipes like his own go-tos, including a Berry & Banana Greek Yogurt Parfait or Pan-Seared Garlic & Lemon Salmon.
Nevertheless, Roker would be the first to acknowledge that his strategy isn’t so much about strict limitations. Rather, he adheres to a balanced approach with allowances for excesses while focusing on moderation. “Moderation instead of deprivation is best in the long term,” he’s stated.
Exercise is also a part of his regimen, although his hectic schedule makes it difficult at times. He attempts to do a few miles of walking a day, but on tighter days, he’ll do a walk to the office or accomplish 20 minutes of weight work instead of abstaining from anything.
His motto is straightforward: “Something is better than nothing.” It’s a worldview that exemplifies not just his health, but also his continued dedication to maintaining a healthy lifestyle.
